Pixie Seed’s Crunchy Granola

If you are like me, you might have a little bit of a sweet tooth but trying to eat a little healthier. Today I want to share with you my favorite crunchy granola recipe.

When I was teaching kindergarten in Arizona, I had students share their favorite healthy snacks. One talented young student won me over with her yogurt parfait. The students enjoyed watching her fill 30 small cups with yogurt, fruit, and Granola. Then repeating the process until each of the cups were full. The students eagerly waited. They were all incredibly patient to get their share but knew it was worth the wait.

Since this healthy snack from my student, I have been in search of the best ingredients. I have tried other store-bought Granola, but homemade foods always taste better.

Easy & Taste Great

As a busy mom, it is easy to make it on the weekends or the night before. Then it is ready to go on your way out the door to work or school. It is my quick ready go-to morning ritual. All I do is add this Pixie Seed Crunchy Granola to my favorite yogurt and fresh fruit. Then I am ready to start my day; after I have my coffee, that is.

Granola is a favorite of mine, but I do not enjoy chewy Granola as much. I like a little crunch to it, so I know it is not stale. I also like some bit of flavors in the Granola, like cinnamon and vanilla. You can add other dried fruits in this recipe like cranberries, bits of mango, or coconut, but I prefer to add fresh fruit when I am ready to eat.

Pixie Seed’s Crunchy Granola

Preheat the oven to 350 degrees Fahrenheit.

Grease a cookie sheet with butter, cooking spray, or line with parchment paper. I prefer lining it with parchment paper to avoid extra grease. I have had problems with aluminum foil, where it would stick to the Granola. Once it cools, I lift the parchment paper’s two ends to easily slid the Granola crumbles into a storage container.

1 ½ cup of oats

1 ½ cup rice crispy cereal

1/3 cup of sliced almonds

½ tsp ground cinnamon

¼ tsp salt

1/8 tsp nutmeg

1/3 cup packed brown sugar

3 Tbsp of melted butter

1/3 cup of honey

1 tsp of vanilla

The Process

The pictures below show the process.

 Add 1 1/2 cups of oats.

 

Add 1 1/2 cups of oats.

Add 1 1/2 cups of rice crispy cereal

 

Follow by adding 1 1/2 cups of rice crispy cereal.

Add 1/3 cup of sliced almonds

 

Then place 1/3 cup of sliced almonds in with the oats and cereal.

Combine cinnamon, salt and nutmeg.

 

Combine 1/2 tsp cinnamon, 1/4 tsp salt, and 1/8 nutmeg to the dry oats ingredients.

Stir in brown sugar and butter

 

Adjoin 1/3 cup of brown sugar and 3 Tbsp of melted butter to the dry oats ingredients.

Add honey and vanilla

 

Mix in 1/3 cup of honey and 1 tsp of vanilla.

Steps

Stir the ingredients thoroughly and spread them onto the cookie sheet. Bake in the oven for 8-10 minutes. Take it out and carefully stir the Granola, then place it in the oven for another 8-10 minutes. 

Once it is out of the oven, you can stir the Granola a little to have it in small pieces or cut it for more significant portions. Let it cool for about 10 minutes on the cookie sheet before serving or placing it in a sealed container. The Granola tastes great served in milk or with your favorite yogurt and fruit to make a parfait in the morning. The Pixie Seed Crunchy Granola makes about 4 cups.

The Pixie Seed Crunchy Granola should be golden brown when it is complete.
